Grilled chicken with Za’atar

The spices and crunch of the Za’atar blend perfectly with the lemon to create a very more-ish grilled chicken recipe.  Adapted from Serious Eats and Bon Appetit.


  • 6 T olive oil
  • 1/4 c Za’atar
  • zest of one lemon
  • 3 T lemon juice
  • 3 cloves garlic, minced
  • 1 t salt
  • ~2 lbs chicken thighs, wings, or drumsticks


  1. Combine all ingredients but chicken in a large baking dish, and stir to combine.
  2. Marinate chicken in Za’atar mix for a minimum of 2 hours, or overnight.
  3. Cook chicken on grill, brushing with extra marinade, until it reaches an internal temperature of 156F.
